Bread!

Well cheating for thanksgiving had its consequences, still not feeling well! But it was so good! Here is a website I found that has yeast free bread just expensive!

Here is a recipe for yeast free pizza!!
If I get plain tomatoes and boil them I could use that for sauce and then get goat cheese for topping? Add some spices, just cant do pepper, hmmm sounds good!

Happy Thanksgiving!

We all have much to be thankful for even in the midst of crisis we have more than some people will ever know. I am so thankful I can walk with both legs, all my limbs are usable and I have two beautiful girls and a great husband! Today is the day that I will not be following my diet so hopefully it wont make me too sick! Looking forward to stuffing my face because I have been so starved eating rabbit food! Thankful for those military families who are away from their families guarding ours, and Im thankful for my hubby and other fireman and police that are guarding our families here. We are going to see hubby at the fire station and eat with them, so thankful to be able to do that! :)

The incredible Edible EGG

Breakfast is so far, eggs, eggs, or eggs...scrambled, omelet or fried? For Lunch I had some left over shrimp, rice, and broccoli. The most frustrating thing is I Love to snack! Nachos are my favorite and Im not supposed to have cheddar cheese, or any cheese I suppose. I really want to try to eliminate these things, I have been so sick and recently diagnosed with Inflammatory Bowel disease on top of other autoimmune diseases. I am praying that by switching my diet I will be healed. I have more energy but my stomach pain has actually gotten worse. Anyone else have this issue?
Yesterday, we went to a few different markets around town and the prices are really not in our budget. Being allergic to oats, our main question is, can I still eat meat that is grain fed oats? This is a complex question. In reality we are what we eat. If we can get antibiotics from the meat we eat that they are given then eating a meat that was fed oats I can prob absorb the same right? There is only ONE market that has grass fed meat and its extremely expensive! It was 10.56 for our meat for tonight. Luckily we found sweet potatoes on sale for 28 cents a pound so that's going to be our dinner tonight.
Praying that this pain subsides church is going to have some awesome testimonies of people that have overcome many obstacles especially health ones. Its most important to be filled with positive stories to overcome and heal yourself.

Well, We just finished the grass fed meat. VERY different than the meat we usually eat. The lady in the store said to cook in a crockpot on low so that's what we did. I added parsley, oregano, salt, onion salt to it for flavor, but Parsley was over powering and not the flavor I was going for. I think next time I will marinate with some olive oil, salt, onion, and garlic. We put the sweet potatoes wrapped in tin foil in the oven on 400 for 1 hour and added sugar and butter when they were done. The other thing I have found is the lack of eating carbs has made my blood sugar drop a lot, so Im drinking more juice. I just had my first Soy coffee and it was good actually. Now to go to church!

Eggplant Parm

So, I love Italian food. I'm looking for some good tasty treats to eat! Tonight we opted to try some Eggplant. Eggplant is a very healthy vegetable choice and should be part of your diet. It's very low in fat, and packed with fiber (leave the skin on), as well as vitamins such as vitamin C and K, folate, thiamine, and niacin. Add minerals like magnesium and potassium and you have a very nutritious veggie.

Eggplant can be tough to cook because it can easily become mushy, leading so many people to decide that they just don't like it. But the right recipe can give you crisp and tasty eggplant.

I like to look for a starting point for recipes and modify as I go.

Ingredients:
1-2 eggs
1 Eggplant
Can of tomatoes( I use Hunts)
Tomato sauce (aNy will do- if your not allergic to pepper you can really have tasty fun)
Bob's Redmill Natural Wheat Germ ( as Bread crumbs)
Minced Garlic or fresh garlic
Parsley
Basil
Oregano
Salt
1 tsp sugar
Goat cheese

# Preheat oven to 325F.
# Slice eggplant into ¼ inch to ½ inch slices.
# In a small mixing bowl, mix the egg
# Put the wheat Germ into a separate bowl.
# Place each slice of eggplant into the egg to coat each side lightly, coating evenly. Dip into the dish of wheat Germ to cover and coat. More wheat germ or bread crumbs will give you a crispier piece of eggplant.

Heat a pan of Olive Oil and saute onion till soft with the spices. Next add garlic for 30 seconds on med heat. Now add pieces of eggplant and fry each side for 1-2 minutes. Then place into a pan with some tomatoes and sauce lining the bottom. Place cheese on top of the eggplant a little more sauce on that and cover and bake for about 30 minutes.

It was ok, needs some more flavor for me maybe lemon?

Crazy Allergies

Well, after many days of research I have come to find there is close to no help for people with MULTIPLE food allergies not just Gluten or peanut. Aside from turning into a rabbit, I decided to go ahead and put one foot in front of the other and create my own blog with new recipes I find,hopefully this will help you or someone you love as well. Please feel free to email me with suggestions and comments. I am open to ideas, but please refrain from sending me links to recipes that are not useful, at this point I have seen them all!
