Thanksgiving!

Hope everyone had an awesome thanksgiving! We did, however someone gave me some suposively gluten free stuffing that was in one way or another not good for me at all. I had a very bad reaction and was very sick yesterday and still feeling like poo today. I did however make an awesome gluten free pumpkin cheesecake that is loaded with fat and calories but Oh my sooooo good!! I dont even like cheesecake but Ive honestly eatten half the cheesecake by myself! I will post it later I got the recipe from another blog so I must make sure to post that as well. I also attempted a pumpkin pie but the crust turned out very soggy which is my fault because I added extra butter thinking it looked too dry. Again, playing with these recipes will be fun.
I was finally able to try glutinos gluten free pretzels and crackers and they are awesome!! Wish they werent so expensive but they are really good. I need to branch out and find some good recipes that are cheap, not time consuming and taste good...see my problem? Its nearly impossible to find all three with gluten free meals. Another day is another time to experiment though. Here we gooooo

Menu Options

Well Since going gluten free I have had a hard time finding references for places for the kids to "treat" them. Such as there are no more happy meals, or any kind of "fast" meals that come with cute little toys they will inevitably fight over but served its purpose for the day.

Its been frustrating. I have found several restaurants that do have gluten free alternatives. One of my favorite restaurants that I emailed; Ruby Tuesday, just posted this;

This includes all of the allergens and alternatives to be able to eat there. Currently, they have a buy one get one free coupon (up to $15 off) as well on their facebook page, ends Nov. 1st. I love their salad bar. Even though I am sad their fries are not included at least there are some options available.

Another site I came across details the places in the Hampton Roads area that this person has visited and found to have GF options.

My other favorite is Olive Garden, and so I will be looking into researching there so when we have the funds I can enjoy my OG!

Christina's Apple Cinnamon GF Muffin Recipe

My Gluten Free Apple Cinnamon muffins
3 apples peeled and chopped
1 cup Bobs All purpose GF flour
1 cup soy flour
1 Tablespoon Vanilla
Cinnamon
½ cup Brown sugar
1 teaspoon baking soda
1/3 cup oil
2 eggs
2/3 cup applesauce


Place peeled chopped apples with cinnamon and browns sugar coating. Mix well let sit for 3o minutes.
Whisk all the dry ingredients together, and then add in wet ingredients.
Mix together well then fold in apples.
Put in muffin holders
Bake on 350 for 20 minutes

My Gluten Free Chicken and Broccoli Alfredo

My Gluten Free Chicken and Broccoli Alfredo
4 Tablespoons Butter
1 cup milk( We use Lactose Free milk) You could use Almond milk, or rice milk also
2 Tablespoons Bob’s Gluten Free All Purpose Flour
½ tsp salt
½ tsp. onion powder
½ tsp parsley
½ tsp basil
Garlic
½ cup Parmesan Cheese
½ block of Mozzarella (shredded)

I kept the heat on low the whole time.
Melt Butter in pan while olive oil heats for chicken.
Add chicken with olive oil and add garlic powder. After Chicken has cooked add in broccoli, cover for around 4 minutes.
After butter has melted add flour and whisk, then slowly add in milk and whisk for 30 seconds.
Then add in cheeses little bits at a time. Whisk together. Add in spices. We added 1/3 cup of water at the end to water it down a little and we used the Deboles Corn Elbows.

New diagnosis

So I found out my Celiac genectic test was positive. I had the skin tests for the reguar foods and it was negative. So, he said I need to go gluten free. Oh ok...this is going to be interesting! Im going to have a journey of finding a way to financially be able to pay for gluten free products. Will post as I come up with some good recipes :)

So since Ive gone back to eating whatever I am in pain all over. I cant concentrate and feel like poo. Its frustrating though not knowing exactly what I CAN eat. Im waiting to get the pill camera done again and then I will know hopefully if I have Crohns or Celiac and why I have ulcers and lesions in my small bowel. We are going to do a trial of gluten free diet to see if Rileys hives stop and Brianna feels better and see if I will go into some sort of remission. We will see...

moderation

I havent really had time to worry too much about the food I eat, too many other issues going on. I have noticed that yeast is my biggest trigger. I can eat a little but too much and Im hurting. Milk products as well but I can eat some with no problems. I guess its a matter of testing things one at a time to see what your triggers are. My gastro says I have malabsorption issues in my small bowel which is why all my vitamins etc are low. So, I really cant afford right now just to eat lettuce. I guess finding a balance and everything in moderation is key.

My daughter continues to break out in hives for an unknown reason. Shes been tested but nothing came up. Shes been really good lately then today out of no where broke out alot! :( My poor baby!
